How to Make an Eggnog Martini

O.K., I admit...I am an eggnog addict. I look forward to it all year, and once the holidays arrive, once a week I have to cut out almost an entire meal a day just to devote those calories to the creamy concoction. I am not even that picky when it comes to the eggnog itself- generic brands, low-fat, or homemade, flavored, you name it. If it has "eggnog" in the name, and it is in liquid (or ice cream) form, I am one happy girl. Now, the only way to make me even more enthusiastic is if it's an eggnog martini...now that's perfection! I've had a lot of delicious booze-filled eggnog recipes made with a variety of liquors, however I recently created a version that I think best accentuates what is already so very decadent in its original state. The Eggnog Martini
2 oz. Spiced Rum
2 oz. traditional eggnog (I prefer the light version for this recipe)
1/2 oz. Vanilla Infused Simple Syrup (see recipe below)
1/2 oz. Spice Infused Simple Syrup (see recipe below)
1 whole nutmeg, used to be grated over top of martini, for garnish
1. Combine ingredients in shaker
2. Shake vigorously, strain into chilled martini glass
3. Grate a touch of fresh nutmeg over the martini
Enjoy!
Vanilla Simple Syrup:
2 cups sugar
1 cup water
2 vanilla beans, split in half lengthwise
1. Bring water and sugar to boil in saucepan, stirring frequently.
2. Add vanilla beans and reduce heat, let simmer for 5-10 minutes.
3. Let stand for 3 hours. Keep unused portion refrigerated.
Spiced Simple Syrup
2 cups sugar
1 cup water
2 cinnamon sticks
1 whole nutmeg, split in half
5-7 cloves
1. Bring water and sugar to a boil.
2. Add remaining ingredients. Let simmer for 15 minutes.
3. Let cool. Refrigerate unused portion.

I could have used this recipe an hour ago but I already made a batch of egg nog.
